Zesty Grilled Whole Chicken with Corn

  • 1 4-4.5 lb. chicken whole
  • 2 tablespoons room temp butter
  • 1/2 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon rosemary
  • 1 teaspoon orange zest
  • 1/2 teaspoon salt
  • 1/2 teaspoon coarse pepper
  • 3 lemons, quartered
  • 4 ears of corn, halved
  • 1 teaspoon lemon zest

Preparation

Step 1

Heat your STŌK Grill to 350ºF.

Step 2

Rub the whole chicken with butter on all exterior surfaces. In a small bowl mix the cumin, turmeric, rosemary, orange zest, salt, and pepper. Rub this mix all over buttered chicken. Take a can of chicken broth or your favorite beverage, remove half of the liquid and place the can into the center holder of the STŌK Chicken Roaster insert Place the seasoned whole chicken on top of the can and prop in a sitting position

Step 3

Cook the chicken at 350ºF for 60 minutes, and then lower to 325ºF for another 30 minutes. (Note: The rule of thumb is about 18-20 min per pound.) If the chicken starts to get too brown, cover it with some foil.

Step 4

Rub the corn with lemon zest, salt and pepper, and place along with the quartered lemons around the base of the chicken in the Chicken Roaster insert for the last 15 minutes of cooking.

Step 5

Make sure the internal temperature of the chicken is at least 165ºF before taking it off the STŌK grill. Let your chicken rest for at least 10 minutes prior to serving.

Step 6

Squeeze the lemons on the corn and rub with butter before serving.
