Use charcoal to preheat STOK Drum to medium-high heat. While the grill preheats, gather and prep necessary ingredients.
Place bratwurst directly onto the STOK grill grate.
Once bratwurst are half way done (approx. 10 min), place Wok Insert in Drum and add 1 Tbs olive oil.
Add sliced sweet onion into Wok Insert.
Occasionally stir onions until caramilized.
Flip brats occasionally until internal temperature reaches 165º.
Using tongs, place cooked brats in hotdog bun.
Cover with sauteed onions.
Top with shredded cheddar cheese and garnish with mustard.
