Great grilled dessert for you holiday BBQs. This grilled doughnut is topped with fresh fruit and cold ice cream; perfect for a hot summer evening. Sweet, fresh and won't break the bank. Enjoy
NOTE: 6 doughnuts will make 12 servings, so adjust the recipe to your needs.
Prepare the fruit topping: Dice strawberries and mix with blueberries and sugar. Place in fridge to keep cool.
Prepare the mango sauce: Peel and slice the mango. Then place in food processor or blender with lime juice. Puree the mango until runny. Place in fridge to keep cool.
Prepare the glazed donuts: Cut each doughnut in half sideways, as if it were a bagel.
Heat grill for indirect and direct cooking. For charcoal, place all the coals on one side. For Propane, light one side of the grill only.
Place the doughnuts glazed side down on the grill on indirect heat. Close lid and leave for 1-2 minutes.
Flip doughnuts so the cut side is down and place over direct heat. Cook until golden brown on the cut side. Approx 1-2 minutes.
Remove the doughnuts from the grill and serve hot: Place a doughnut cut side up on a plate, place a scoop of ice cream on top of the doughnut on one side, and several scoops of the fruit topping on the other side. Then drizzle with the mango sauce.
