While your preheat your STOK grill, slice and measure your ingredients.
In a large bowl add eggs and whisk well.
Add your flour and cinnamon
Add grated carrots.
Add bread crumbs
Add flour and stir mixture completely. Set aside and let rest for 10 minutes while you make Sriracha sauce below.
Stir mixture completely. Scoop 1/8 cup of mixture and make it a patty.
Heat 2 tablespoons of olive oil on your STOK griddle insert. Once hot add the patties to the insert and cook for five minutes turning once. Flip once the bottom side is golden brown and repeat.
Once they are brown of both sides serve them immediately.

Add the sriracha
Stir completely and set aside until the patties are ready to serve.
