Gather all ingredients and set STOK grill to high heat.
Cook ground chorizo about halfway on the STOK Griddle Insert. When the chorizo is halfway cooked add in potaoes and cook until chorizo is well done.
Add the chorizo and the potatoes to tortilla, top with rotel and jalepenos.
Spread questo fresco on the tacos and squeeze fresh lime juice them.
