Oatmeal Cranberry Ice Cream Sandwiches

  • 1.5 Cups Old Fashioned Oats
  • 1.5 Cups Flour
  • 2 Eggs
  • 2/3 Cup Softened Butter
  • 1 Cup Brown Sugar
  • 1 Cup Dried Cranberries
  • 1 Tbsp Cinnamon
  • 1/2 Tsp. Salt
  • 1 Tsp. Baking Soda
  • Ice Cream (I used Neopolitan)

Preparation

Step 1

Insert STOK Pizza Stone and set to low heat (about 200 degrees)

Step 2

Combine Butter, Sugar, Cinnamon, and Eggs- stir till well mixed.

Step 3

Combine Oats, Flour, Baking Soda, Salt into a bowl and stir till well mixed. Add 1/2 of the oat mix to the butter mixture and stir till even. Then add the rest of the oat mix and stir. Add Cranberries.

Step 4

Drop dough onto the stone- about 2 inches apart. I comfortably fit 7 cookies on the stone, but if you have a Mega Stone, you can do more. * If your stone is not well seasoned yet, the cookies may stick. To avoid this, layer a piece of aluminum foil over the stone, shiny side up.

Step 5

Cook for 13-15 minutes, and remove. I recommend removing them before they're completely firm for a slightly gooey texture.

Step 6

Allow cookies to cool completely. Place about 2 tablespoons of ice cream between two cookies. Then, wrap each sandwich with a strip of wax paper and place in the freezer until it's time to eat!
