Gather all ingredients.
Bake potatoes on grill until soft in the middle.
Cut the potatoes in half.
Scoop out the pulp and leave a thin shell. Save the pulp for later if desired.
Place shells back onto grill and bake until crispy.
Spread butter evenly into all of the potato skins.
Add red bell peppers into mixing bowl.
Add broccoli into bowl with peppers.
Mix cheese, peppers, and broccoli together.
Scoop mixture into potato skins and cook until cheese starts to melt.
Top with green onions.
Place onto a place and place a dollop of sour cream on top, serve and enjoy!
