While your STOK grill is preheating, get all your ingredients prepped, this cooks quickly.
In a medium bowl start with chicken
Add the red enchilada sacue
Stir to combine the ingredients
Place your WOK Insert on your STOK grill and layer the chips on the bottom.
Begin to layer your nachos starting with the chicken mixture
Add the cooked black beans
Spread bell peppers over the nachos
Put the corn on the nachos
Cover the mixture with cheese
Close cover for 3 minutes and let the cheese melt and the other ingredients heat. Keep on medium low to not burn the chips on the bottom.
Pour on your pico de gallo
Add sour cream
Spoon on the guacamole and dig in!
