  • 1 homemade or refrigerated pizza crust
  • 1-2 teaspoons cornmeal
  • 1 tomato, diced
  • 1 ball fresh Mozzarella, thinly sliced
  • Large bunch fresh basil, finely chopped
  • 3 tablespoons extra-virgin olive oil, divided
  • Salt and pepper to taste

Preparation

Step 1

Preheat Pizza Stone in STOK Grill to low, between 200°F and 250°F. If using the STOK Tower, click here for heating tips.

Step 2

Follow directions on pizza dough package. Dust a pizza peel with cornmeal and lay the dough on top.

Step 3

Drizzle with 2 tablespoons of the olive oil and spread oil all over dough, leaving a ½ border to make crust.

Step 4

Evenly spread diced tomatoes, slices of mozzarella and chopped basil over dough.

Step 5

Once the grill is heated, use a pizza peel or thin cutting board to transfer the pizza to the Pizza Stone, close the grill lid and cook until crust is golden brown, about 15-20 minutes.

Step 6

When pizza is fully cooked, use the pizza peel to transfer to serving dish.

Step 7

Drizzle pizza with remaining olive oil and sprinkle salt and pepper to season. Slice and serve.
