Set STOK Grill to High, and reduce heat to medium high.
Fill STŌK Wok about 1.5 to 2 inches deep.
Blend Milk, Eggs, Lemon Extract
Combine flour, sugar, salt and baking powder in sifter and sift into milk/eggs. Blend till smooth.
Test heat of oil by dropping a spoonful of batter in. It should sink momentarily then rise and begin to brown pretty quickly.
Dribble about ¼ cup of batter into frying oil. Traditionally this is done with a funnel, but you can also use a measuring cup. Pouring slowly and steadily, make outward expanding circles of batter.
Allow to brown for about 50 seconds, then carefully flip and let it cook for another 50 seconds.
Remove from oil and drain on a plate with a paper towel.
Dust with powdered sugar, and/or drizzle with warm icing. Serve hot with your choice of fruit.
