Lamb Skewers with Chimichurri Sauce

  • 2 lbs boneless lamb roast, cut into approx. 1.5" cubes
  • 2 garlic cloves, minced
  • 1 tbs honey
  • 1.5 cups IPA beer
  • 1.5 cup extra-virgin olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 cup fresh parsley, packed
  • 1 cup fresh cilantro, packed
  • 1 tbs fresh oregano
  • 1 clove garlic, minced
  • .5 tsp lemon zest
  • 2 tbs red wine vinegar

Preparation

Gather ingredients and set STOK grill to medium heat

Place the lamb cubes, garlic, and honey into a mixing bowl and stir.

Add enough beer until the mixture is completely submerged.

Cover and place in refrigerator for up to 1 hour.

Step 5

While you wait for the lamb to marinate you can make the chimichurri sauce. Finely chop all of the parsley and cilantro and place in mixing bowl. Next, add the minced garlic, lemon zest, salt, pepper, oregano, and red wine vinegar. Mix thoroughly. Add in olive oil until mixture comes together.

Slide marinated lamb cubes on skewers and place on the STOK Kabob/Rib Rack Insert.

Step 7

Place on grill and cook for for about 10 minutes. Turn the skewers every 3 minutes so they can cook evenly on each side.

Remove from grill, and cover in the chimichurri sauce. Serve on the skewers and enjoy!
