Get all your ingredients together so you can start the process.
Pound the meat with a mallet until 1/4 inch thick
To begin making the batter add two eggs to a large mixing bowl.
Add the buttermilk
Add the cayenne
Add the garlic
Whisk the ingredients together until thoroughly mixed.
Mix your flour with the cracker crumbs.
Dredge the meat in the batter one piece at a time, being sure to cover both sides well.
Once all the meat is covered you are ready to cook.
Add vegetable oil to your STOK wok insert and heat until about 375 degrees
Place the meat in the oil and cook on each side about 3 minutes, being sure to turn them before they burn.
Assemble your bread with lettuce, tomatoes, onions. Spread mayonnaise and mustard on both side. Put the meat in the bread once it is cooked thoroughly, about 3 minutes side.
