While you preheat your STOK, get all your ingredients ready to start cooking.
Place the slices of pear on your STOK grill grate and brown until they are tender. This will take few minutes to cook them. While your pears are cooking add 2 Tablespoons butter and melt on your STOK Griddle Insert add the sliced onion and cook until they are caramelized.
Spread butter evenly on your bread.
Spread shredded cheddar cheese over the bread.
Put the caramelized onions on top of the cheese.
Place the cooked sliced pear next.
Add another cooked pear.
Spread the goat cheese on the other side of the bread for the sandwich.
Place on your STOK Grill Griddle Insert over medium heat.
Once the sandwich is brown on one side turn over and brown on the other side.
Once both sides are browned, sliced the sandwich and serve.
