Grilled Strawberry Shortcake

Preparation

Step 1

This is a simple, yet delicious, grilled dessert that's sure to delight your guests. The combination of fresh fruit with the crispy grilled cake has made this dish a favorite around our home. After you try this, be sure to come back and leave a comment letting everyone know how you liked it.

Step 2

Cut angel food cake into cubes/chunks about 1" to 1 1/2" wide. If using a pre-made store bought cake, it works good to slice the cake in half sideways first to basically create two shorter cakes, then slice the two half-cakes into chunks.

Step 3

Remove the tops from the strawberries and cut into thick slices. For smaller strawberries, you will typically just slice in half, for larger strawberries, slice in thirds. If the slices are too thin, they will not stay on the skewer. You could also substitute a different fruit such as Pineapple or peaches if you prefer.

Step 4

Place the cake pieces and strawberry slices onto skewers, alternating cake and berries, leaving about an inch on each end of the skewers to prevent the pieces from falling off.

Step 5

Prepare the condensed milk by adding the water to thin it out to make basting easier. It should be just thin enough to brush on the cake, but not runny. You may need to adjust the amount of water added to get the right consistency.

Step 6

Brush the prepared condensed milk onto each side of each piece of cake on each skewer. The condensed milk will create a nice crust on the cake when grilled and will also help keep the cake from sticking to the grill while cooking. It is important that each piece of cake is brushed with the condensed milk.

Step 7

Before placing skewers on the grill, oil (or spray) the cooking grate to help prevent sticking.

Step 8

Once the grill is hot, place the skewers directly on the grate over direct medium heat.

Step 9

The skewers will need to cook for about 1-2 minutes on each side, or until the cake is starting to brown. Watch closely and turn each skewer as needed. Use caution to prevent the cake from burning while cooking.

Step 10

After all sides have been grilled, remove the skewers from the grill

Step 11

Serve prompty while hot. Remove the cake and strawberries from the skewers and serve topped with a scoop of vanilla ice cream.
