Gather all of your ingredients and heat your grill to medium heat.
In a large mixing bowl, add your mayonnaise.
Add your roasted red peppers.
Add your jalapeños.
Mix your mayo, roasted red peppers, and jalapeños together. Then add your shredded cheddar cheese.
Add in your Pepper Jack Cheese.
Mix everything together thoroughly.
Spread the cheese in your wok insert.
Place the bread on the grill. Then close the grill and heat until bread is crispy and the cheese is melted.
