Grilled Meatloaf Ring

  • Meatloaf
  • 2 lbs. mixed ground pork, ground veal and ground beef
  • 1 medium onion, diced
  • 1 small clove of garlic, minced
  • 2 egg yolks, lightly beaten
  • ½ cup tomato ketchup
  • 1 tablespoon -steak sauce
  • ½ cup dried or panko breadcrumbs
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • ½ cup chopped fresh parsley, plus more for garnish
  • Sauce
  • 1 14.5-ounce can crushed tomatoes
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1 medium onion

Preparation

Step 1

Heat your STŌK grill to 350ºF.

Step 2

Combine all 10 meatloaf ingredients in a large bowl and mix well. Shape the mixture into the ring of the STŌK Chicken Roaster Insert. Using a knife, score the top of the loaf in a diagonal pattern with ½-inch cuts.

Step 3

Combine all 3 sauce ingredients in a bowl and mix well. With a basting brush, brush a small amount of the sauce onto the entire meat loaf ring.

Step 4

Peel the medium onion and scored the top in 8 slices. Place the onion on top of the center ring and pour some marinade over it. Salt and Pepper to taste.

Step 5

Grill for 60 minutes at 350ºF.

Step 6

When the meat has hit an internal temp of at least 160ºF, turn the grill down to about 250ºF and liberally brush on more of the sauce, close the lid and let sit for 15 minutes.

Step 7

Allow the meatloaf to rest for a few more minutes and then transfer the meatloaf to a serving platter. Slice the meatloaf and drizzle the sauce over the slices. Sprinkle parsley on top and serve.
