Place your Kettle Insert into your STOK grill and preheat to high. While your grill is heating up gather all of your ingredients.
Start by melting half of your butter into your Kettle Insert.
Place all your scallops into the butter, flat side down.
Add the rest of the butter and begin to flip your scallops.
Add salt, pepper, and crushed red pepper to the kettle.
Add in your garlic and turn the grill off. The heat from the cast iron will continue to cook the scallops.
Add in your lemon zest, and stir the scallops around in the garlic butter mixture.
After 3-4 minutes, remove your scallops from the heat.
Squeeze fresh lemon juice onto the scallops.
Drizzle a little bit of olive oil onto the scallops.
Garnish with some Italian parsley and serve!
