Gather all of your ingredients and heat your grill to medium high.
Place your sausage links onto the grill and cook thoroughly. Remove from the grill once cooked.
In a large mixing bowl add in your eggs.
Now add in your sugar.
Add in your vanilla extract.
Add in your milk.
Add in your cinnamon.
Whisk all of the ingredients together in the bowl .
Cut all of the crust off of all of the bread.
Roll each of the pieces of bread flat with a rolling pin.
Place a sausage link into one of the slices of bread a roll it up.
Coat the wrapped sausage link into the egg mixture.
Place the roll ups onto the griddle insert. Roll them around ensuring that they are brown on each side.
Remove from the heat and serve hot. Serve with maple syrup if desired.
