Light grill to medium heat and gather ingredients.
Add sugar, cinnamon, and salt to mixing bowl.
Stir until well blended.
In a separate bowl, whisk egg white, water, and maple syrup until frothy.
Add pecans to the liquid mixture and stir to combine, coating each pecan in egg white mixture.
Add cinnamon mixture to pecans.
Stir until pecans and thoroughly coated.
Place Cast Iron Kettle Insert on STOK grill and coat with cooking spray.
Place coated pecans in cast iron and cook for one hour.
Remove from grill and serve.
