Chicken Satay

  • 6 skinless, boneless chicken breasts, cut into strips
  • 2 tablespoons creamy peanut butter
  • ½ cup soy sauce
  • ½ cup lemon juice
  • 1 tablespoon brown sugar
  • 2 tablespoons curry powder
  • 2 cloves of garlic, minced
  • 1 teaspoon hot pepper sauce
  • Peanut Sauce:
  • ¾ cup creamy peanut butter
  • 3 tablespoons soy sauce
  • 1 teaspoons red chili paste
  • 2 tablespoons brown sugar
  • 1½ limes, juiced
  • ½ cup hot water

Preparation

Step 1

Combine everything but the chicken and peanut sauce in a small bowl. Place chicken in a glass dish and pour marinade over chicken. Cover with lid or plastic wrap and refrigerate chicken for 2 hours or longer.

Step 2

Remove one grate insert and preheat the STŌK Grill to medium heat, between 300°F-350°F.

Step 4

Thread chicken pieces onto metal skewers included with the STŌK Kabob and Rib Rack. Place the skewers onto the Kabob Rack and transfer it to the empty slot on the STŌK Grill, using the STŌK Insert Removal Tool. Grill the skewers 7-10 minutes per side or until the chicken is thoroughly cooked.

Step 5

Remove skewers from the Kabob Rack, using long handled grill tongues or heat resistant oven mitts and serve with Peanut Sauce.

Combine first 5 ingredients in a bowl and mix well. Gradually add hot water until it reaches desired consistency. This may not require the entire ½ cup.

Step 8

Pour into serving bowl.
