Chicken Fajita Stuffed Peppers

  • 2 cups cooked brown rice
  • 5 medium bell peppers of any color
  • 1 medium yellow chopped onion
  • 2 gloves garlic - minced
  • 2 tbsp canola oil - divided
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 lb diced chicken
  • 1/4 tsp paprika
  • salt and freshly ground pepper
  • 1 (10 oz) can tomatoes with green chilis
  • 1 cup black beans - drained and rinsed
  • 1 cup frozen corn
  • 3 tbsp fresh cilantro, plus more for garnish
  • 1 tbsp fresh lime juice
  • 2/3 cup shredded monterey jack cheese
  • Sour cream
  • Mexican style hot sauce

Cut peppers in halves and set to the side.

Oil pan and cook diced chicken until tender.

Into the chicken, add brown rice, onion, garlic, chili powder, cumin, canned tomatoes, paprika, salt and pepper, black beans, corn, cilantro, and lime juice. Cook mixture until onions become translucent,

When mixture is cooked thoroughly, stuff the mixture into each pepper.

Add monterey jack cheese to the top of each stuffed pepper.

Place them onto the grill and allow them to heat for 5-7 minutes.
