Chicken Fajita Nachos

  • 3 Boneless skinless chicken breasts chopped
  • 2 cloves garlic, chopped
  • 1 yellow onion
  • 1 red or yellow pepper
  • 1 green pepper
  • 1 Tablespoon Olive Oil
  • 1/2 teaspoon Chili powder
  • 1 teaspoon cumin
  • dash cayenne pepper
  • 1 lime
  • 1 cup shredded mexican cheese
  • 2 jalapeno peppers

Step 1

Cut and prepare all ingredients before starting. This will move very quickly once you start. Preheat grill and Cast iron kettle add one Tablespoon of Olive oil and heat to approximately 350 degrees.

Put all the chopped chicken in the kettle and cook about 5 minutes and cook half way.

Add chopped medium onion to the kettle, then add chopped garlic, spices and peppers and jalapeños. Cook until the peppers and onions are clear and shiny.

When the food is finished in the kettle squeeze the juice of one lime over the pan still on the and stir to loosen food and drippings from the pan. Remove meat and put chips in the bottom of the kettle.

Plate the food on top of the chips. Layer the cheese and salsa and it is ready to eat.
