Autumn Skewers

Ingredients Used:

  • 1 medium Sweet potato peeled and cut into 1 1/2 pieces
  • 1 cup sherry vinegar
  • 1/2 cup plus 1 Tbs honey
  • 2 Tabs canola oil, more for grill
  • Kosher salt and freshly ground pepper
  • 1 lb boneless, skinless chicken breast halves, cut into 16 pieces
  • 4 small ripe but firm peaches, quartered, pitted
  • 1/2 small sweet onion, cut into 1 1/2 inch chunks, separate layers
  • 1/2 cup pecans, coarsely chopped
  • 1/2 tsp ground cumin
  • 1/2 tsp pumpkin pie spice

Get all of your ingredients prepped.

Pre-heat your Stok Gridiron grill with the bottom to your Stok Grill Kabob Insert in place.

Assemble your skewers before placing them on the Stok Grill Kabob Rack.

Place the Stok Grill Kabob skewers onto the grill to begin to cook.

While the skewers are cooking drizzle them with oil.

While rotating every few minutes shake the salt on the skewers.

Continue to rotate and pepper the skewers.

When they are almost finished cooking, drizzle the cooked skewers with honey.

Before pulling the skewers off the Stok Grill, sprinkle chopped pecans all over them.
