Get all your ingredients together while your STOK grill preheats to medium-high.
Put the raw sausage on Stok Grill griddle insert and begin to cook.
Cook sausage until no longer pink and drain.
Once sausage is cooked place on paper towels and drain.
Whisk together 6 eggs and 2 Tablespoons of water. Coat the griddle with vegetable spray. Add egg mixture to hot griddle.
Stir while the eggs are cooking.
Spoon eggs into the tortillas.
Spoon on cooked sausage.
Sprinkle with cheese.
Spoon on salsa.
Add sour cream.
Fold edges in and roll the tortilla away from you.
